What is it anyhow?
In short, it’s only one of the top 10 nutrient-dense foods in the world. It’s fiberous and rich in vitamins, A, K and C, among other nutrients.
It’s HIGH in antioxidant and anti-inflammatory nutrients.
It’s a very versatile vegetable, that you can steam, enjoy raw OR even in the oven.
We were watching the NFL conference championships today and decided to throw some together. Here’s what we did, and what you can do, too.
– wash, rinse and dry 1 bunch of kale.
– tear into bite size pieces, making certain to remove the stems to the degree you can
– toss in a large bowl with 1 TBSP of extra virgin olive oil, 1 tsp of oregano and 1/2 tsp of garlic salt (you can add a little more later if you wish).
– Layer them on a baking sheet and bake in the oven at 325 degrees for 12-15 minutes or until the edges are light brown but NOT BURNT.
The only downside is that 1 bunch will be DEVOURED in about 2 minutes. So be prepared to buy 2 bunches on your next trip to the grocery store.
