4th of July weekend is upon us and many are getting together to celebrate with neighbors, family and friends. That also means incorporating and celebrating around foods…from meals, to drinks to snacks to desserts.
We wanted to share some ideas with you…things that either we’ve created or have found online and enjoyed ourselves.. Here are some festive menu options that keep things mostly fresh, light AND delicious to serve at your party.
Cashew & Oat Hotcakes
Mixed Berry and Almond Oatmeal
Egg White Veggie Omelet with Fresh Pico de Gallo (we learned how to make the following pico at a salsa making class in Cozumel last year…mix up 2 diced Roma tomatoes, 1/2 cup onion, 1/2 jalapeno de-seeded, 1/4 cup diced cilantro, salt to taste, 1-2 TBSP fresh lime juice.)
Quinoa Salad & Garden of Eatin’ brand Organic Blue Chips (This is OFF. THE. CHARTS.)
Hummus Stuffed Mini Bell Peppers. (see the picture above…we cut the tops off of tri-colored mini bell peppers and add 1 TBSP (or a little less) of Sabra brand Roasted Red Pepper Hummus)
